Spiced Apple Muffins recipe


These quick and simple muffins are perfect to make for a crowd of youngsters. If you make them the day before don't refrigerate, just store in a tin and pop back in the oven for 5 minutes before serving warm in their own wrappers.

Makes: 10-12

Ingredients



350g all-purpose flour
1/2tsp salt
2tsp ground cinnamon or mixed spice
3tsp baking powder
75g castor sugar
2 eggs, beaten
Scant 210ml milk
4tbsp butter, melted
2 crisp sweet apples (a good 225g) skinned, cored and diced
3tbsp sultanas

Method



1. Preheat the oven to 190C/375F/Gas Mark 5. Lightly grease muffin cases (or a muffin tin) and place them on baking trays ready.

2. Sift the flour, salt, cinnamon and baking powder into a bowl and add the sugar. Beat the eggs, milk and melted butter together and then stir into the dry ingredients. Add the chopped apple and sultanas and stir gently until just blended.

3. Bake for 30 minutes or until well risen and just firm to touch. Serve warm with melted butter or cooled with ice cream or crème fraîche.

Tip:

To make them even more spicy add finely chopped stem or crystallised ginger.
