Salmon on Wilted Spinach recipe

This quickly fried salmon should be barely cooked in the middle, for the best flavour and succulence, but a few minutes more if you prefer won't harm it.

Ingredients



Finely chopped chives
4tsp crème frâiche
4 pieces of salmon fillet, skinned
Olive oil
1tsp paprika
1tsp sea salt
250g washed spinach
Juice of 1 lemon
1-2tsp mustard seeds
Salt and black pepper


Method



1. Stir the chives into the crème frâiche and set aside. Mix 1tbsp oil with the paprika and sea salt and rub over the salmon.

2. Heat a ridge frying pan and sear the salmon for 1-2 minutes on each side or until just cooked. Set aside and keep warm.

3. Heat 2tbsp oil in a wok or large pan. Add the spinach and mustard seeds and toss over a high heat until the spinach has wilted. Season with lemon juice, salt and pepper, to taste and divide among four warmed plates.

4. Top the spinach with a piece of salmon and serve with the crème frâiche.
