
225g plain flour
1tbsp baking powder
50 g ground almonds
Finely grated zest and he juice of 1 lemon
110g butter, melted
1 egg, beaten
2tbsp flaked almonds
1. Preheat the oven to 190C/375F/Gas Mark 5. Lightly grease baking trays or cover with wax paper.
2. Sift the flour and baking powder into a mixing bowl, stir in the almonds and zest and make a well in the middle.
3. Mix together the juice, butter and egg and pour into the middle of the flour and then gradually work in to form a soft dough.
4. Form the mixture into 20 balls and place well apart on the baking trays. Flatten slightly with a fork, press on a few slaked almonds and bake for 12-15 minutes until just colouring and almost firm to the touch.
5. Cool on wire racks before storing in airtight containers.
Tip:
Orange could be used instead of lemon if you prefer or a little grated chocolate instead of the flaked almonds.
