
The potato makes many excellent economy dishes, like this easy bake, that can be eaten simply on their own, or served with sausages, a bacon joint, grilled sardines, or have extra protein such as chopped bacon or chicken added.

675g potatoes, thinly sliced (peeled if you wish)
3 onions, peeled and thickly sliced
2tbsp chopped mixed herbs or 2tsp dried herbs
Salt and black pepper
50g butter
75g cheese, grated
300ml milk
300ml stock
1. Preheat the oven to190C/350F/Gas Mark 5.
2. Layer the potatoes and onions in an ovenproof or earthenware casserole sprinkling each layer with herbs, seasoning, a few knobs of butter and half the grated cheese.
3. Mix the milk and stock together and pour over the vegetables. Sprinkle the remaining cheese on the top and bake for 50-60 minutes or until the potatoes are really tender and the top is golden and bubbling.
Tip:
If you are baking in advance cook for only 40 mins and don't let the top colour too much. When ready to serve bake for another 20 minutes or until bubbling and golden.
