The perfect breakfast to start off the New Year - especially if your head is feeling a little delicate! You don't need much smoked salmon so keep a packet in the fridge - makes a great late night supper too....

Ingredients
4 free range eggs
Salt and black pepper
1tbsp boiled water, optional
1tbsp butter
1tbsp chopped chives
25g smoked salmon
1. Whisk the eggs briefly with seasoning to taste and the water to lighten it if you wish. Heat the butter in a small non-stick pan until just sizzling but not colouring.
2. Add the eggs all at once and beat briskly at first. Once it begins to cook stir gently until it is lightly scrambled or as firm as you prefer. Then stir in the herbs.
3. Serve on toast or toasted muffins, with thin strips of smoked salmon and a sprinkling of black pepper.
Tip:
You may also find a glass of chilled bubbly helps the day improve!
