Pasta, Tuna and Broccoli Salad recipe

If your youngsters are not keen on broccoli try green beans, sugarsnap peas, or colourful chunks of red and yellow peppers instead.

Ingredients



225g pasta spirals
4tbsp light vinaigrette dressing
2tbsp mayonnaise
2tbsp natural yoghurt
Fresh chives, and parsley chopped
100g broccoli florets
8-10 button mushrooms, wiped clean
100g piece of fresh tuna, briefly grilled (or tinned tuna)

Method



1. Cook the pasta according to packet instructions, until firmly cooked, drain and toss into a large salad bowl.

2. Mix together the dressing, mayonnaise, yoghurt and chives and stir into the pasta whilst it is still warm.

3. Blanch the broccoli spears in boiling water for 5-7 minutes adding the mushrooms (halve them if they are quite large) for the last 2 minutes. Drain thoroughly and add to the bowl of pasta.

4. Leave to cool and finally stir in the chunks or flakes of tuna. Serve immediately or leave to cool.
